Recipe for Pastry Cream with vanilla (epicurious recipe):
- 1 1/2 cups half and half
- 1/2 cup sugar
- 2 large eggs
- 1 large egg yolk
- 2 tablespoons all purpose flour
- 2 teaspoons vanilla extract
Follow the step-by-step directions in the video then chill for about 4 hours. Makes a wonder cupcake filling.
Another recipe for Pastry Cream…
2nd pastry cream recipe a bit fancier. This one uses a split vanilla bean, more egg yolks and milk.
Here is the 2nd recipe:
- 4 cups of whole milk
- 5 egg yolks
- 2 whole eggs
- 1 cup of sugar
- 1 vanilla bean split length-wise
- 6 tablespoons corn starch
Follow the directions in the video! :o)
Both recipes are delicious. This is the filling used in eclairs. It is a wonderful filling to insert into the center of a cupcake and then top the cupcake with a dollop of the cream and drizzle chocolate over the top. Yummm :)
