Peanut butter cupcakes icing recipe. Add chocolate cupcake base with a molten center, and you’ve got peanut butter in my chocolate! And I’d put the peanut butter/chocolate combination up as the world’s best combination ever :) But then I’m a chocolate superfan!

Recipe for Pastry Cream with vanilla (epicurious recipe):

• 1 1/2 cups half and half
• 1/2 cup sugar
• 2 large eggs
• 1 large egg yolk
• 2 tablespoons all purpose flour
• 2 teaspoons vanilla extract

Follow the step-by-step directions in the video then chill for about 4 hours. Makes a wonder cupcake filling.

Another recipe for Pastry Cream…

2nd pastry cream recipe a bit fancier. This one uses a split vanilla bean, more egg yolks and milk.

Here is the 2nd recipe:

• 4 cups of whole milk
• 5 egg yolks
• 2 whole eggs
• 1 cup of sugar
• 1 vanilla bean split length-wise
• 6    tablespoons corn starch

Follow the directions in the video! :o)

Both recipes are delicious. This is the filling used in eclairs. It is a wonderful filling to insert into the center of a cupcake and then top the cupcake with a dollop of the cream and drizzle chocolate over the top.  Yummm :)
